Creamy Chicken Broccoli Casserole

Some nights a comforting casserole is just what you need. This creamy chicken broccoli casserole is a perfect meal on those nights.

Years ago, a friend brought me a casserole after having my oldest daughter. It was a simple rice casserole that was delicious and filling. I made sure to get the recipe from her and over the years I have tweaked the recipe a bit to fit our taste. This chicken broccoli casserole is the result of my changing a few ingredients here or there. I hope you enjoy it as much as we do!


Creamy Chicken Broccoli Casserole

Ingredients
1 cup uncooked rice
2 cups chicken broth
10 ounces chicken, chopped or shredded
1 can cream of chicken soup (or 12 oz homemade)
1/2 cup mayonnaise
1/2 cup evaporated milk
salt and pepper to taste
4 ounces broccoli, chopped in small bites
4 ounces shredded cheese

Directions

Heat oven to 350 degrees
1.  Cook rice in chicken broth for 12 minutes.

2. Chop chicken and broccoli into bite sized pieces. For the broccoli, the smaller pieces the better. Pieces of broccoli that are too large will not get cooked all the way.
3. Stir the mayo, milk, cream of chicken soup, salt, and pepper in a mixing bowl. Add in the chicken and mix well.

4. Spray a 9 x 13 casserole dish with cooking spray.
5. Put the cooked rice in the dish, add broccoli to the top of the rice. Then add the sauce that you mixed to the top of that. Gently mix the sauce into the rice and broccoli.
6. Bake for 25 minutes. Sprinkle cheese on the top and bake for an additional 15 minutes, or until melted.

Let your casserole cool for 5 minutes, then serve with a nice green salad. I hope your family likes this as much as mine does.

    1. It is a great way to add some veggies! I gave a portion of this casserole to my father, who hates anything green. When he returned the tupperware, he let me know how much he liked it - broccoli and all!
