With a mixture of crisp bacon, creamy cheeses, fresh green onions, and good quality eggs you will have a breakfast, brunch, or dinner dish that will be a crowd pleaser. This crustless quiche is an easy to make recipe, but looks gourmet.

Easy to Make Quiche Recipe

Serve this quiche with a colorful fruit salad, some easy mini cinnamon rolls, or crispy hashbrowns for a full meal.

I've made this dish twice for my family and the fact that there were no leftovers either time proves that it is a tasty recipe we will definitely keep making! I popped this in the oven for Christmas breakfast and there were oohs and ahhs all around the table.

In the past year or two, I have started making more recipes from scratch. I like knowing what ingredients go into the food that I serve to my family. I make my own veggie or poultry broth, stewed tomatoes with produce from my garden, homemade "cream of" soups, spaghetti sauce, and many more items.

When it comes to commerically bought items, I like to buy locally made or supplied foods. When I was contacted by Nellie's Free Range Eggs to possibly work with them in creating a recipe for my blog, I visited their website and was impressed that they are make up of over 125 small family-run farms in the Northeast and Midwest - and expanding all the time. These farms are Certified Humane and free range. After reading these facts, I was excited to partner with them to bring you a fast and delicious recipe.

Bacon and Cheese Crustless Quiche

I'll be honest, I made this quiche crustless because I didn't want the bother of making a pie crust and blind baking it before adding the egg mixture. We absolutely love this recipe just how it is. It serves up easily, you can have no worries for your gluten-free guests, and it's a quick to prep recipe. If you decide that you want to add a crust, I'm sure it will add a flakey and buttery depth to your quiche.

Fresh and Flavorful Ingredients for Crustless Quiche

1/3 cup green onions - sliced in rings
4-5 pieces of cooked bacon - crumbled

Note: You can add additional ingredients depending on the taste that your family likes best. Saute mushrooms or bell pepper would be tasty as well.
